Matcha Scones

Matcha Scones
Inspired from BBC Food. Com

Ingredients:

55g butter
25g caster sugar
225g self raising flour
1 tablespoon of Matcha powder
pinch of salt
1 egg
150 ml milk

Directions:

1)      Preheat oven to 220°C  & grease  baking tray/ sheet


2)      Combine flour, salt & Matcha powder & rub in the butter till  dry & flaky.

3)      Add I sugar & milk to get a soft dough.


4)      Knead the dough on a floured work surface &  try to pat out to a round 2 cm thick.  Using a 5 cm round ring cutter to and cut out shapes  & place them on baking tray/ sheet.  


5)      Brush egg white on top of the scones & Bake for 12 to 15 mins till well risen & slightly  brown.  Serve the scones warm, cut in half & with fresh whipped cream or jams.

Nougat Brownies




I think by now most of you know how much I love nature & spending time outdoor just from the pictures that you’ve seen on my blog.   Obviously I adore picnics so when Louise from Months Of Edible Creations invited me to join in The Picnic Game event , I was really trilled & wouldn't want to miss it in the world.  I’ve never play this  picnic game before even as child so I’m very excited to join in the fun.  How we play this game?   Well, every blogger will choose a letter & come up with a yummy treat with that letter.  And I’ve chosen ‘N’ for Nougat.  I love nougat & had made ice-cream with it but  it’s time to make them more decadent !!  I’ve used  white  nougat  from  Montélimar also known as Nougat De Montélimar for this recipe.  It’s preferable to use chewy nougat so that it’s easier to cut into pieces .  It is also best served when they are  still warm to taste the melting nougat oozing out from these brownies .   I must say it's a pure delight  &  a total melting moment for me!  LOL  For those of you who love nougat as I do, this is a recipe you should try.  An amazing combination of chocolate & honey nougat that seems like  a piece of heaven!

 in Mrs Musgrove's kind wishes,  as to her son, he had probably been at some pains to get rid of him;
but it was too transient an indulgence of self-amusement to be detected
by any who understood him less than herself; in another moment he was perfectly collected and serious, and almost instantly afterwards coming up to the sofa, on which she and Mrs Musgrove were sitting,  took a place by
the latter, and entered into conversation with her,  in a low voice, about her son, doing it with so much sympathy and natural grace, as shewed the kindest consideration for all that was real and unabsurd
in the parent's feelings.



 
Nougat brownies
Inspired from  Le Flo Des Saveurs

Ingredients for 16 brownies                                    
200g dark chocolate
100g flour
80g sugar
4 eggs
200g nougat ( cut into small cubes)
200g butter 

Directions:

1) Preheat oven to 200°C. Grease cake pan or  muffin pan


2) Melt chocolate & butter on double boiler / bain marie till smooth.


3) Beat egg & sugar till creamy. Fold in flour & gradually pour in melted chocolate. Stir well til all combined.


4) Add in small cubes of nougat into the chocolate batter & mix till well combined. Pour in cake pan or individual pan , filling only  ¾  full. Bake for 15 minutes. Taste best  while it’s warm.

Another treasure from my garden... Pink Lavender



Three years ago I bought this pink lavender from The Netherlands during our stay at my sister's lovely home.  I've never seen pink lavender before so I've decided to get not one but I also purchased a white lavender too.  When I bought this it was a tiny plant but look at it now.  It's  not totally fully bloom but I just can't resist it but to take some pictures & share them here. Hope that you all will like it & may the summer season begin with this lovely lavender & some delightful  picnics too!

Pear Pinwheel & Hazelnut Cake





I’ve almost forgotten The Home Baker  (THB)  challenge this month & luckily I can still catch up!  Phew…. Just in time  & I must say that I  was a bit panic there!  LOL  As always I think I’m the last to submit my entry  &  most of  members are already baking the next recipe from Lou Seibert Pappas cookbook , Coffee Cake.  This is our 4th bake from this cookbook & this recipe was chosen by Zoe of Bake For Happy Kids.  I

Pear Pinwheel & Hazelnut Cake

1) Beat butter & sugar.


2)  Gradually add in eggs & almond extract.


3) Fold in hazelnut & flour mixture till well combined.


4) Pour batter into a springform pan & arrange the slice pears before sprinkle sugar, cinnamon & nutmeg . P/S I've missed one step which was coating the pears with this sugar mixture before placing them on the batter!

Coffee Cheesecake For Father’s Day

A little beauty, and a few smiles, and a few compliments to the navy, and I am a lost man. Should not this be enough for a sailor, who has had no society among women to make him nice?"
He said it, she knew, to be contradicted.  His bright proud eye spoke the conviction that he was nice; and Anne Elliot was not out of his thoughts, when he more seriously described the woman he should wish to meet with. "A strong mind, with sweetness of manner," made the first and the last of the description.
"That is the woman I want," said he.  "Something a little inferior I shall of course put up with, but it must not be much.  If I am a fool, I shall be a fool indeed, for I have thought on the subject more than most men."




Coffee Cheesecake
Adapted of Andy Harris from  Jamie Oliver & Co cookbook- Desserts

Ingredients:

For chocolate base:
190g flour
70g cocoa powder
230g cool unsalted butter (cut into pieces)
110g powdered sugar
1 pinch of salt

For coffee cream filling:
4 eggs
680g Philadelphia cream cheese
450g thick or double cream
200g powdered sugar
200 ml espresso
Cocoa powder for topping

For coffee caramel:
100 ml espresso
65 ml liquid cream
80g brown sugar
70g butter

Directions:

  
For the chocolate base:
 Beat butter, flour cocoa powder & sugar till dough. Press evenly the dough onto the bottom of the 20cm greased spring form pan. Place in refrigerator for 30 minutes. Preheat oven to 150°C (th.5) & bake for 35 to 40 minutes & let to cool.
 

For coffee cream filling:
 Beat cream cheese till smooth; add in sugar & mix well. Gradually add in eggs , one at a time & beat continuously. Fold in double cream with espresso till well combined. Spread cream filling on top of chocolate base & smooth with spatula. Place cake pan in a baking pan. Pour water into the baking pan (be careful not to pour any water into the cream cheese mixture) so that the water level is halfway up the sides of the cake pan. Cook for 75 to 90 minutes in 150°C heated oven. Let it to cool before placing it in refrigerator for at least 5 hours.


For the coffee caramel sauce:
Place all ingredients in a saucepan on medium heat. Bring it to a boil for 3 to 4 minutes & stir till the sauce thicken a little & leave to cool.

Remove coffee cheesecake from cake pan & sprinkle some cocoa powder on top. Serve with coffee caramel sauce.
