A lovely Surprise




Firstly ,a huge thanks to Resh from Daily Cuppa for nominating me for The Versatile Blogger award. This is my first award & I really do appreciate that Resh like my humble blog. Thank you so much Resh, & I mean from the bottom of my heart.  Not only Resh is a dentist but also a great food blogger too. Do check out her blog for amazing recipes.

7 random things about me

1)   I'm a full time housewife & chauffeur for my 2 teenage sons.
2)   I love DIY , shopping for almost anything! LOL  & not forgetting reading too.
3)   I love cakes , pastries & my biggest weakness is CHOCOLATE. That's why I'm not slim & skinny. My sister (Desperate housewife in Holland) told me once that my body looks like Mariah Carey, the rounder version!!
4)   Besides period drama & series ,I love to watch horror movies & the paranormal! This is the darker side of me! 
5)   I like to attend yoga class twice a week especially when my yoga teacher looks like Rupert Everett!! This is me in my midlife crisis speaking ! LOL
6)   I love gardening & have a variety of roses. If you want to see my rose collection click here.
7)   I'm a PC dummy  but thanks to my hubby & our 2 boys who helped me time to time .

Passion Fruit Cream Cupcake - Cupcake à la crème passion




  Passion fruit is my favorite fruit besides raspberry. I love these cupcakes & the passion cream added a delicate taste to the cupcake that makes it special .

Passion fruit cupcakes - Cupcakes à la crème passion
A recipe of Johanna Farrow

Ingredients for 12 cupcakes

150g butter softened
150g powdered sugar
3 eggs
1 tsp vanilla essence
150g self-raising flour
12 cupcake wrappers

For frosting
4 passion fruit pulp
150ml thick cream (crème fraîche)
100g icing sugar

Directions:

1) Preheat oven to 180°C.



2) Beat butter sugar, eggs, flour & vanilla essence till combined.

3) Line 12 cupcake wrapper on cupcake pan. Spoon in batter into prepared cupcake wrappers. Bake for 20- 25 minutes till golden brown. Let to cool.


4) Spoon the pulp of 2 passion fruit into thick cream and beat together with 1 tbsp of sugar till combined.


5) For frosting, beat icing sugar with pulp of 2 passion fruits till smooth.

6) Remove cupcake liner from cupcake. Slice cake horizontally in half & spread with passion fruit cream. Topped with passion fruit frosting.

Savoury Cocoa Crepe With Carrots & Cumin Coconut Cream

Lady Russell, convinced that Anne would not be allowed to be of any use, or any importance, in the choice of the house which they were going to secure, was very unwilling to have her hurried away so soon, and wanted to make it possible for her to stay behind till she might convey her to Bath herself after Christmas; but having engagements of her own which must take her from Kellynch for several weeks, she was unable to give the full invitation she wished, and Anne though dreading the possible heats of September in all the white glare of Bath, and grieving to forego all the influence so sweet and so sad of the autumnal months in the country, did not think that, everything considered, she wished to remain. It would be most right, and most wise, and, therefore must involve least suffering to go with the others.

Savoury Cocoa Crepe With Carrots & Cumin Coconut cream

Ingredients for 6

For savoury cocoa Crepe:

150g flour
50g cocoa powder
4 eggs
1/2 litre almond milk
20 ml vegetable oil
1/2 tsp salt

For Carrots & Cumin coconut cream

1 shallot(finely chopped)
3 yellow carrots (sliced)
3 orange carrots(sliced)
3 potatoes(cut into pieces)
450g coconut milk
1 tsp cumin seeds
1/2 tsp grounded paprika
1/2 corn starch deluded with 2 tbsp water
2 tbsp vegetable oil
Salt & pepper
Pink pepper

Directions:

For Crepe:

1) Combine all dry ingredients in a big bowl. Pour in almond milk with oil & stir well.

2) Gradually add in egg one at a time & keep on stirring till all combined. Place in refrigerator for 1 hour.

3)Heat pan, greased lightly, pour in 3 tbsps of mixture. Cook till slightly darker brown. Turn Crepe over & cook. Repeat with remaining batter.


4) Preheat oven to 150°C. Place Crepe on ramekin & press to shape it. Place in oven for 5 to 10 minutes.

For carrots & cumin coconut cream

3) On a heated cooking pan, pour in oil, chopped shallots with potatos & fry for 5 minutes. Add in slice carrots & cook for few minutes.


4) Add in cumin seeds & paprika & stir well. Pour in coconut milk & bring it to a boil.

 
5) Pour in cornstarch deluded in water with salt & pepper. Cook till the milk thickens.

6) Place Crepe on place & spoon in carrots & potatos. Sprinkle some pink pepper & few coriander leaves.
